A wider tire with a shorter,stiffer side wall will wander more, but alignment adjustment can help. Was rear toe checked? Even a very small amount of rear toe out can make things a bit spooky.
Try 1/8" toe in front, 0-1/8" toe in rear and as much caster as you can get. This should improve self centering and stability.
